Eggplants and honey
The bars of Granada offer a wide variety of tapas and today we would love to talk to you about one of the most emblematic: eggplants with honey (and you can prepare them for your family meetings!).
Not only it is typical from the city, it is a very easy recipe that requires very few ingredients:
- 2 eggplants (of course, this will vary depending on the number of people).
- Flour to fry.
- Extra virgin olive oil.
- Salt.
- Cane honey (we recommend that, if you have the opportunity, you buy some of the delicious ones made in the Alpujarra, or any local farm to support the local economy and industry).
Eggplants can be cut into slices or strips; Personally, we recommend that you do not cut them too thin because otherwise they will lose their flavor. You cannot skip the next step: it is very important to leave the strips in salted water to remove the bitterness, for approximately fifteen minutes. After this time, you have to dry them with some kitchen paper, coat them with flour and fry them in oil (you can also cook them in the oven or in the air fryer) and, when they turn golden brown, we put them on kitchen paper again to remove the excess oil. We place them in the container in which we are going to serve them, pour the honey over them... and that's it, enjoy!
